🥩 SF Startup creates alt meat from captured CO2
Back in the 1970s NASA scientists explored ways to turn elements in the air into protein for astronauts. The research was shelved and forgotten until Air Protein founders Dr. Lisa Dyson and Dr. John Reed rediscovered it.
How does it work?
Air fermentation begins with the same building blocks that all plant life needs to grow—air, water, and renewable energy.
Elements of the air are whisked together with cultures until they produce protein within a matter of hours—a process similar to how yogurt, cheese, and wine are made.
The protein that the cultures produce is harvested and purified, then dried to remove water. The result is a super-clean, protein-packed flour—nutritious, versatile, and ready to be turned into any meat.
Perhaps the technology’s biggest caveat is that it requires hydrogen too—meaning that it needs electricity to split hydrogen from water. However, it of course requires less land, less water and no pesticides to produce.
But is it good for you?
Founder Dr. Dyson claims that Air Meat is cleaner and more nutritious than animal meats.

So far Air Protein has raised $32M and hopes to reach shelves in the coming years.
